Sodexo celebrates sandwich week with a special stottie

Some of the North East’s most well-known venues will be treating conference delegates to one of the region’s most iconic culinary delicacies this month.

In honour of British Sandwich Week, (May 12 to 19), chefs at Sodexo Prestige, which manages conferences and events at Newcastle United FC and Tyne & Wear Archives & Museums, will be adding traditional, hand carved ham and pease pudding stotties to the menus already on offer to corporate guests.

In preparation, chefs have sourced Northumbrian ham, consulted traditional recipes for the pease pudding - made by cooking yellow split peas in bacon or ham stock - and practised making the stotties, which are named after the Geordie word for bounce – stott - thanks to their dense texture which prevents them from crumbling when dropped.

St James’ Park and Newcastle’s Laing Art Gallery, Discovery Museum and Great North Museum: Hancock are among the region’s most popular conference venues and the sandwiches will be included in the day delegate menus offered to corporate guests for one week only.

In addition Sodexo venues in other parts of the country will offer similar sandwich variations unique to their region, such as The Berkshire Charmer at Ascot Racecourse and smoked chicken with a Thai coleslaw on honey bread in Scotland.

Mark Parfait, creative food director at Sodexo Prestige, said: “British Sandwich Week is a great opportunity to celebrate the one of our best loved fast foods – the British sandwich.

“This year we have teamed up with our local suppliers for each of our venues and created a sandwich using locally sourced products.

“When delegates choose to host their conference or events at our venues, food is one of the key factors influencing their decision. By serving these sandwiches during British Sandwich Week we are reinforcing the importance we place on locally sourced ingredients and on supporting our local food producers.”
