Delifonseca Dockside delivers first class graduation feast
Delifonseca Dockside is set to get graduates jumping for joy with the launch of its exclusive Graduation Gourmet menu.
In an attempt to heighten the festivities amongst family and friends, the multi-award winning eatery will offer the perfect setting for a sophisticated soiree.
Devised by head chef Martin Cooper, the extravagant seven-course meal will feature a diverse array of one-off wonders and speciality dishes, to mark the celebratory occasion.
Proprietor Candice Fonseca said: “Graduation is such a proud moment, which will be treasured forever. Therefore, we want to allow graduates to further their celebrations by providing them with a truly fine dining experience.”
To begin the flavoursome feast, on arrival guests will receive an Elderflower Bellini. the food will get started with a Gazpacho Shot. Diners can then choose from a variety of starters including Bruleéd Chicken Liver Parfait, Trio of Salmon and Tart Rouge (an exquisite beetroot & blacksticks blue tart)
After cleansing their palates with a Champagne Sorbet, guests can select from an assortment of mains including Fillet Steak with sautéed Wild Mushrooms and Bordelaise Sauce, Guinea Fowl stuffed with Tarragon and Truffle Mousse. Cod Supreme with Smoked Mackerel in Cucumber Jelly and Black Olive Gnocchi, all of which will be served with contemporary trimmings.
Desserts are art on a plate with multiple elements but summer is celebrated with mango mille feuille, strawberry consommé with white chocolate mousse, pistachio meringues, and Gooseberry fools amongst. Chocolate lovers aren’t forgotten with a chocolate and peanut butter ganache involved in the chocolate dessert plate. The meal concludes in style with s Coffee and Petit Fours.
Candice added: “The dishes will live up to the celebration. The chefs have really flexed their creative muscles and the menu needs to be read and then eaten to be truly appreciated, as we really have pulled out all the stops. Our aim is make graduation days last that little bit longer and we hope to make them even more special and memorable.”
The Graduation Gourmet Menu is available Monday, July 14 – Thursday, July 24 (excludes Sunday, July 20) and is priced at £45 per person.
