Ruby’s ready to shine in East Kilbride
A new East Kilbride hospitality venture is preparing to open its doors.
Ruby’s, the town’s newest independent venue, will officially launch on Wednesday, December 17 after a £700,000 transformation of the former Coppertrees restaurant on St James Way.
Led by operators Struan Barclay and former Crystal Palace and Scotland international James McArthur, the project has reimagined the site as a modern neighbourhood hub designed for dining, drinks and relaxed socialising.
The venue will offer more than 100 covers, an adjoining bar suited to everything from quiet pints to big-screen sport, as well as a heated outdoor garden that is both family and dog friendly.
Struan said: “James and I are thrilled to confirm our opening date.
“The response from the East Kilbride community has been fantastic, and we can’t wait to open the doors in December and unveil the new venue.
“Ruby’s is designed to feel warm and inviting from morning to night, and we’re incredibly proud of what the team has created.”
Ahead of opening, Ruby’s has unveiled menus featuring locally sourced ingredients and bold, flavour-led dishes across breakfast, lunch and evening service.
The food offer ranges from dedicated egg dishes at breakfast to hearty winter mains and indulgent desserts, alongside a curated drinks list spanning fresh lager, cocktails, Guinness and speciality coffee.
A takeaway breakfast and weekday lunch menu will also be available, catering to nearby workers and local residents.
Ruby’s has also retained all existing staff throughout the refurbishment and created additional roles as it prepares to welcome guests for the festive season.
James added: “Our goal has always been to create a space people genuinely enjoy spending time in, whether that’s for a casual coffee, a midweek meal or a weekend night out.
“With the opening date now set, we’re looking forward to welcoming everyone and showcasing exactly what Ruby’s is all about.”
