Sunderland chef lands spot on Great British Menu
A Sunderland-based chef is set to represent the North East on a leading BBC cooking show.
Ryan McVay, owner and chef of The Calabash Tree, will represent the North East in the upcoming series of Great British Menu, competing in the North East and Yorkshire heats airing on BBC Two tomorrow (Tuesday, March 24).
His appearance marks a milestone for the city, with The Calabash Tree becoming the first Sunderland-based restaurant to feature on the programme.
A former firefighter, Ryan retrained in the kitchen following an injury, building his business from scratch as a self-taught chef.
His cooking draws heavily on his Trinidadian heritage, bringing Caribbean flavours to the North East dining scene.
Ryan said: “Being selected to represent the North East is something I’m really proud of.
“There’s so much talent in this region, so to be chosen is a huge honour.
“It pushed me in ways I didn’t expect, but it was an incredible experience and a chance to showcase Caribbean food on a national stage.”
The Calabash Tree, based at Sheepfolds in Sunderland, is known for its small plates and music-led atmosphere, offering a relaxed setting alongside bold, flavour-driven dishes.
Ryan’s participation also highlights a cuisine that remains underrepresented in the region, with his approach focused on depth, balance and authenticity.
Viewers can expect dishes that reflect both his roots and the creative demands of the competition, bringing a fresh perspective to the national stage.
Ryan added: “Caribbean food is all about big flavours and influences from all over the world.
“It’s not just about spice – it’s about balance, culture and storytelling through food.”
Ryan’s appearance comes alongside fellow North East contender Cal Byerley of Michelin-starred Restaurant Pine, underlining the region’s growing presence on the national stage.
