Darlington welcomes new independent butcher
A Darlington-based independent retailer is carving out a place in the town centre with the opening of a new butcher’s shop.
The Chopping Block is set to open this Wednesday (April 15) in the town’s historic Market Square, founded by Ory Vanes and Matt Waistell, who aim to bring high-quality, locally sourced produce back to the high street.
Combining backgrounds in hospitality and commercial property, the duo have invested in a high-spec fit-out and built a skilled team to support the launch.
The shop has already recruited a master butcher, a manager and two apprentices through Darlington Borough Council’s Trailblazer scheme, supporting local skills and employment.
Ory said: “We’re passionate about locally sourced products.
“Traditional butchery is a dying art, and we only want to sell the very best meat in our shop.
“There was a vacant space on Darlington Market Square, underneath the indoor market, and we thought we should just go for it as it’s a great location.
“It allows us to supply our own businesses, provide quality meat to the town, and create jobs.
“We wanted to bring a butcher shop right into the heart of the town centre, support local businesses, and keep community money circulating in the local economy.
“Our goal is to grow into a business offering a huge range of products and acting as a hub for other local suppliers.”
Local demand has been strong, with several businesses already signed up to source meat from the shop.
The Chopping Block is now open throughout the week, offering a modern take on traditional butchery rooted in quality, community and craftsmanship.
